20 Minute Chicken Stir Fry (AIP, also Vegan optional)

Who said clean and healthy eating should take hours slaving in the kitchen?!

This a misconception many of my clients have when we discuss swapping out microwave or ready made meals and replacing them with fresh delicious foods.  I get it.   We work full time, have kids and running around after work and it feels like it is so much easier to stop and pick up a pizza or wings rather than cooking.  But it really isn’t easier.  The great thing is, we are seeing a shift with our food industry.  With the ever increasing numbers of obesity, cancer, heart disease and autoimmune disorders the consumer is paying attention and so is the food industry.  When I started on my journey 8 plus years back I couldn’t find a plethora of choices for fresh cut up vegetables.  It seemed there was only carrots and celery.   And all microwavable or frozen items had loads of additives and preservatives.  As a single mom of two kids in diapers and having to take care of my health and my kids, I felt like I spent hours in the kitchen chopping, dicing and spiraling vegetables - it was super exhausting.   All that has changed.  You can step into most grocery chains and find the work done for you.  Fresh cut up zucchini, squash, onions, peppers, broccoli, carrots – most any vegetable you can think of AND they are spiraling as well.  I love grabbing spiraled sweet potato and or zucchini and making pasta.  No more getting out my spiralizer, peeling my vegetable and then having to clean up.  What a waist of time! 

For example this week, I knew I was going to have a busy week and no time for food prepping so shopping at Trader Joe’s I was able to find my favorite staples to make a quick and delicious chicken stir fry.  I picked up already pealed garlic, shredded carrots, diced up onion and broccoli.   You can find my all time favorite cauliflower rice in the frozen section.  This is an excellent grain replacement and it saves over 30 minutes of washing, chopping and “ricing” the cauliflower in the food processor.  Another one of my staples is the cooked chicken breast which is grilled in olive oil, sea salt and black pepper.  No additives or preservatives and very versatile.  You can add it to soups, make chicken salad sandwiches, lettuce wraps and so many other meals by saving time.  If you eat grains occasionally the basmati rice is excellent and so quick!  3 minutes in the microwave and you are done.  The best part - the only ingredient is organic basmati rice.  Below is a picture of all the ingredients and recipe of this healthy meal.  Enough talking, let's get to cooking!  I hope you enjoy!! 

INGREDIENTS:

1 TBLS avocado or grape seed oil

2 garlic cloves, grated or finely chopped

2 teaspoons ginger root, grated or finely chopped

1 cup shredded carrots, or finely chopped

1 medium onion, finely chopped

1 cup broccoli florets, cut small pieces

¼ - ½ cup coconut amino (depending on preference), divided

1 lb. Cooked chicken breast cut into bite size pieces

16 oz frozen bag/fresh of cauliflower rice OR Basmati Rice, cooked

sea salt & black pepper to taste

sesame seeds and cilantro for garnish (optional)

DIRECTIONS:

1) (SKIP  this step if you’re using RICE)  If your making this dish with cauliflower rice, place frozen/fresh rice in a small pot with 1 TBLS water, cover and steam on low while you’re preparing the rest of the meal.

2) Heat oil on med-high in a wok (or sauté pan).  Add garlic, ginger, carrots, onions and broccoli and stir for 5-7 minutes

3) Add ½ of coconut aminos and mix well. 

4) At the same time, if you are using Trader Joe’s basmati rice, cook in microwave on high for 3 minutes.

5) Add chicken and stir for another 2 minutes.

6) Add rice to mixture, OR steamed cauliflower rice and the other ½ of coconut amino, stir well.  Garnish with sesame seeds (optional).
